Tamari Ginger Dipping Sauce

A sauce such as this has many uses - as a dip with crudites, as a cocktail sauce for boiled
seafood or as a condiment with broiled fish or poltry.

1 large egg
2 Tbls ketchup
juice of 1 lemon
1 tsp ground ginger
1 Tbls tamari
1/2 tsp onion powder
2 tsp pepper sauce
1 cup vegetable oil

Place all ingredients in a blender except the oil and process at medium speed until smooth. With
the blender still running add the oil slowly. Refrigerate any leftovers.

Herbal Brown Sugar Dipping Sauce

Use this sauce as a zesty dip with fresh vegetables or as an accompaniment to fried fish.

1 large egg
1 Tbls balsamic vinegar
1 tsp lightly packed dark brown sugar
1/2 tsp dried basil leaves
1 Tbls lime juice
1 tsp garlic powder
1 c vegetable oil

Place all the ingredients except the oil in a blender and process at medium speed until smooth.
With the blender still running, slowly add the oil in a thin trickle, making a mayonnaise-like
sauce. Serve at room temperature and refigerate leftovers.

Spring Roll Dipping Sauce

Besides spring rolls, this dip is great with eggs rolls, pot stickers or as a substitute for soy
sauce.

2 c water
2 Tbls sugar
6 Tbls cane vinegar
2 Tbls tamari
2 Tbls pepper sauce

Combine all ingredients, stir until blended and serve at room temperature.

Fish Sauce

2 garlic cloves, smashed
1 chopped small fresh serrano or other variety chile pepper
1 Tbls sugar
Juice of 1 lime
1 cup shrimp stock
1/2 tspn soy sauce
1/2 tspn Worcestershire sauce
1 Tbls chopped dried shrimp

Combine all the ingredients and refrigerate for at least 1 hour, preferably 4, and serve at room
temperature. Refrigerate any leftover sauce.
