Spring Roll Dipping Sauce Besides spring rolls, this dip is great with eggs rolls, pot stickers or as a substitute for soy sauce. 2 c water 2 Tbls sugar 6 Tbls cane vinegar 2 Tbls tamari 2 Tbls pepper sauce Combine all ingredients, stir until blended and serve at room temperature. -------------------- Fish Sauce 2 garlic cloves, smashed 1 chopped small fresh serrano or other variety chile pepper 1 Tbls sugar Juice of 1 lime 1 cup shrimp stock 1/2 tspn soy sauce 1/2 tspn Worcestershire sauce 1 Tbls chopped dried shrimp Combine all the ingredients and refrigerate for at least 1 hour, preferably 4, and serve at room temperature. Refrigerate any leftover sauce. |
